A bartender is a temporary pharmacist with a limited inventory, unknown. Bartending is a profession that has unique characteristics. In turn, a successful bartender will need to have unique characteristics as well.
Ironically, the most important characteristic for a great career behind the bar is not a skill and therefore cannot be taught; personality. This characteristic is far more important than anything else. If you cannot talk to people and people don’t want to talk to you, you simply won’t make it. There is a common myth with female bartenders that if you look good, the personality is unnecessary. This is untrue. Looking good helps, but it will only get you so far. Candace Bergen once said, “Beauty opens as many doors for you as it closes”. Personality will help you overcome.
I’m not one to criticize, but have you ever been served by someone who is unkempt? I’m not a neat freak, but if someone is bringing me my food or mixing a drink for me, and I notice that he or she doesn’t look clean, I’m likely to leave without my drink. Just as a chef in a restaurant or a nurse bringing you some medication in a hospital, you want your bartender to be clean. Ladies, keep your hands and fingernails clean and your hair pulled back. Nothing will impede building a clientele like poor hygiene.
As fun as tending bar can be, few people I know would do it consistently for free. In most cases, bartenders don’t make a high hourly wage, so her “paycheck” comes in increments every time she works. Managing your tips should be a very high priority to you. Keep them in a safe place and don’t disclose what you’ve made to anyone. With regards to the till or draw, be extremely cautious about managing it. Don’t share the draw unless you have to and do not let anyone have access to it. Always count your change and exercise smart tab strategies. There is nothing more frustrating than having a short draw after a long night.
Knowing your product can help you increase your success in a few ways. Having knowledge of certain drinks can open up a discussion. Products like wine, scotch and beer usually have a large group of enthusiasts. You may be asked to offer a recommendation. Even if you are not a connoisseur, you’ll want to be able to speak intelligently and offer a real recommendation. You recommendation will often yield a higher tip. In addition, a working knowledge of these items will help you upsell product, which increases the bottom line, which ultimately will increase the total amount of your gratuity. Most of the time, anyway.
More than any other time in history, people are impatient. We have access to all sorts of information and convenience that was unheard of just a few years ago. This has caused a marked cultural shift. We hate waiting. To that end, the world has become quite automated and impersonal. Consequently, we are essential ignored, which makes up more impatient. If someone wants a drink, it is usually with the intention to engage in a leisure activity. Combat both of these cultural phenomena with one vital tip. Make eye contact with your patron as quickly as possible. Even if you can’t get the drink or even the order right away, connect with the patron. He will not feel ignored and it will increase the patience level exponentially. Great bartenders are nothing if they aren’t efficient.
In years past, many bars and restaurants would shy away from hiring female bartenders. It was often thought of as a place unsuited for women. Fortunately, there has been a 180 degree turn around to that line of thinking. Women are now encouraged to pursue the field because of the universal appeal to bar patrons. The preceding tips will be the tools you need to find career happiness in the wonderful world of bartending.
